Chicken dishes are famous all over the world. There are many Pakistani chicken recipes which find their way into menus of restaurants all over the world.

It is a well known fact that the finger-licking delicious butter chicken was originated in India. Chicken dishes are very popular in indian-subcontinent. There is a delectable range of chicken recipes, there are tandoori, tikka and gravy varieties of chicken.

Chicken Jalfrezi Recipie

Ingredients
Chicken boneless 1/2 kg
Soya sauce 1-2 tbsp
Garlic chopped 4 cloves
Ginger chopped 1 inch piece
Onion finely chopped 1
White pepper 1/4 tsp
Chinese salt 1 tsp
Chili sauce 2 tbsp
Tomato paste 2 tbsp
Ketchup 1/2 cup
Tomato 1 (cubed)
Red chili 1 tsp
Turmeric 1/4 tsp
Curry powder 1/2 tsp
White pepper 1/2 tsp
Salt to taste
Capsicum 1 (cubed)
Onion 1 (cubed)
Oil 100 ml
Cooking Directions

Marinate chicken with soya sauce 1 tbsp, salt a pinch, Chinese salt 1/2 tsp, white pepper 1/4 tsp.
In pan heat oil and sauté ginger and garlic.
Add marinated chicken and cook.
Add turmeric, red chili, Curry powder, white pepper, Chicken stock, tomato paste, chili sauce, soya sauce, ketchup and mix well.
Add all the vegetables and simmer.
When ready, serve hot with boiled or egg fried rice.
Chicken stock 4-5 tbsp
Butter chicken and tandoori chicken are the most consumed chicken dishes. Butter chicken is made with a variety of spices mixed with a generous amount of butter, yogurt and cream which gives it a characterstic smooth flavor. Tandoori chicken is basically marinated pieces of chicken roasted over coal or in a tandoor. These chicken dishes are usually accompanied by naan or rumali roti which are forms of Indian bread.

Curried chicken which has boneless chicken in spicy gravy is served with rice. Other famous chicken recipes are chicken afghani , chicken tikka masala, Chicken Korma and Chicken Karahi etc. chicken biryani is another mouth watering dish which is quite famous. It is made from chicken pieces in rice mixed with herbs and spices and steamed in a pot.
 Chicken is the most common type of poultry in the world, and was one of the first domesticated animals. Chicken is a major world wide source of meatand eggs for human consumption. It is prepared as food in a wide variety of ways, varying by region and culture. The prevalence of chickens is due to almost the entire chicken being edible, and the ease of raising them.
Chicken as a meat has been depicted inBabylonian carvings from around 600 BC.Chicken was one of the most common meats available in the Middle Ages. It was eaten over most of the Eastern hemisphere and a number of different kinds of chicken such as capons, pullets and hens were eaten. It was one of the basic ingredients in the so-calledwhite dish, a stew usually consisting of chicken and fried onions cooked in milk and seasoned with spices and sugar.
Those of you who follow The History Kitchen regularly know I’m a “nerd” when it comes to food history. I’m also a big fan of the Silver Screen; I’m particularly fond of early Hollywood, silent pictures and cinematic classics. That’s why I was thrilled to stumble upon a rare vintage cookbook called What Actors Eat When They Eat! (Lymanhouse, 1939) This quirky book is a compilation of recipes and “favorite dishes” from some of the greatest stars of old Hollywood. The recipes were compiled and edited by Rex Lease and Kenneth Harlan, two actors who achieved most of their success in silent films. The forward is written by screenwriter Anita Loos, author of the famed comedic novel Gentlemen Prefer Blondes, on which the Marilyn Monroe film is based. Fittingly, the first line of the forward reads:
Gentlemen prefer girls who know how to cook, whether they be blonde, brunette, or titian.
The cookbook is organized alphabetically by actor name. Each entry contains a headshot of the actor, a brief biography and a recipe—either a family recipe, or a favorite dish the actor enjoyed. There are some terrific actors featured in this book. While several of the recipes are outdated and over-processed, it is a fun glimpse at the time period and taste preferences of some cinematic greats.
I made the recipe, and it is pretty good. I used one 4.5 pound chicken, rather than the recipe’s suggested 3 chickens, 1.5 pounds each. I increased the oven heat and baked it for a long time to ensure the chicken was well-cooked and tender. I also thickened the sauce a bit as suggested by the recipe’s liner notes. The recipe produces a LOT of sauce, but it isn’t really a problem, since it helps keep the chicken moist and tender as it cooks. Next time I might cut down on the vinegar a bit; that is a personal preference, though. It’s a simple and homey recipe, just right for a cold autumn evening.
