Mexican Chicken Recipes Biography

Mexican hicken recipie is primarily a fusion of indigenous Mesoamerican cooking with European, especially Spanish, elements added after the Spanish conquest of the Aztec Empirein the 16th century. The basic staples are native foods such as corn, beans and chili peppers. Europeans introduced a large number of other foods, the most important of which were meats from domesticated animals (beef, pork, chicken, goat and sheep), dairy products (especially cheese) and various herbs and spices.
Mexican Rice Recipie
Ingredients
Tomatoes 3 (peeled)
Onion 1 small (peeled)
Chicken stock 1 cups
Salt to taste
Cumin powder ½ tsp
Sunflower cooking oil 1/3 cup
Rice 1 cup
Green chili 2 (chopped)
Garlic 2 cloves (pressed)
Green coriander 1/3 cup (chopped)
Lemon juice 4 tsp
Cooking Directions
Blend together tomato and onion until puree.
Pour puree in sauce pan; add chicken stock, salt and cumin powder. Allow boiling on medium heat.
Meanwhile heat oil in another pan. Then add rice and sauté until rice are golden about 8-10 minutes.
Add green chili and continue to stir about 2 minutes then add garlic and cook 30 seconds.
Pour tomato puree mixture in rice; cover and cook rice on slow heat until all liquid evaporates and rice is 80 % done. (Adjust salt)
Add green coriander and lemon juice. Simmer rice on slow heat for 10 minutes.
Gently toss and serve.
