Many meat sellers use the phrase "Chicken Cutlets" and "Chicken Fillets" interchangeably -- they often say "extra thick Chicken Cutlets", when in fact what they are selling is unpounded Chicken Fillets, or simply Chicken Breasts.

Chicken Cutlets RecipieIngredients
Chicken mince 1/2 kg
Barley 1/2 tbsp wash, soak and grind
Oats 1 cup
Onions 2 medium, ground
Ginger 1 tbsp, chopped fine
Garlic paste 1 tbsp
Garam masala 1 tsp
Black pepper 1/2 tbsp, crushed
Green chillies 1 tbsp, ground
Sesame seeds 2 tbsp, roasted
Eggs 2
Lemon juice 2 tbsp
Salt to taste
Gram flour (besan) pinch
Oil for deep frying

Cooking Directions

Add all the ingredients except oil to mince, mix thoroughly and leave for ½ hour.
Make small oval cutlets, heat oil and fry them, remove when golden brown and drain on absorbent kitchen paper.
Immediately sprinkle the cutlets with a pinch of gram flour.
Serve with naan and tomato sauce

Chicken Cutlets with Chapli Kabab Masala
Ingredients
Chicken mince 250 gm
Potatoes 2 cup (boiled and mashed)
Cheddar cheese ½ cup (grated)
Salt 1 tsp
Black pepper 1 tsp
Garlic paste 1 tsp
Chapli kabab masala 1 tbsp
Ketchup 2 tbsp
Bread sliced 2 (soaked in ¼ cup milk)
Onion 2 – 3 tbsp (finely chopped)
Green chilies 4 (finely chopped)
Coriander leaves 2 tbsp (finely chopped)
Red pepper 1 tsp (crushed)
Bread crumbs as required
Egg 1

Cooking Directions

In a bowl mix all together chicken mince, potatoes, cheddar cheese, salt, black pepper, garlic paste, chapli kabab masala, ketchup, bread sliced, onion, green chilies, coriander leaves and red pepper.
Mix well and make into cutlets.
Roll in bread crumbs and fry.
