Chicken Legs are where most of the dark meat on a chicken comes from -- the legs are all dark meat. Many people avoid dark meat because it has a higher fat content than white meat. Because white meat lacks flavour, though, the same people who avoid dark meat for health reasons often coat, batter, deep fry, or smother white meat in cream sauces. It's quite likely that the people who just eat the dark meat are further ahead.

Other people don't like the taste of dark meat, or don't like the fact that they can see bones in it, and so view it as inferior meat. Consequently, for a few decades now the poultry industry has promoted the white meat parts of the chicken domestically, and exported the dark meat parts to the rest of the world. The Chinese, for example, prefer leg meat.

Legs have maintained some popularity in homes, but you will rarely see them in restaurants. Chefs gave in to consumer demand for white meat, even though it was less flavourful and couldn't stand up to stronger flavours.

Many people wonder how to tell a left Chicken Leg from a right Chicken Leg. There is a "bend" in the leg where the "knee" is, making the leg into a kind of a V. Point the bend forward, away from you, so that you are "inside" the V. If the upper part of the thigh is on the right-hand side of you, you have a left leg; if it's on the left-hand side of you, you have a right leg.


Chicken Drumstick Biryani

Ingredients:

Rice 300 gm
Chicken drumsticks 6
Oil as required
Onion 2 (chopped)
Ginger garlic paste 1 tbsp
Mix whole spices as required
Salt to taste
Cumin seeds 1 tsp
Coriander powder 1 tsp
Red pepper 1 tbsp (crushed)
Coriander leaves ¼ bunch
Green chilies 2 – 3 (chopped)
Tomatoes 3 (chopped)
Yogurt 250 gm
Yellow color a pinch
Saffron a pinch

Cooking Directions:

Heat oil in a pan, add onion and fry till golden brown.
Remove half of the brown onion and keep aside.
In the remaining onion add ginger garlic paste and mix whole spices as required.
Fry for 1 – 2 minutes.
Now add chicken drumsticks, salt, cumin seeds, coriander powder, crushed red pepper, coriander leaves, green chilies, tomatoes and yogurt.
Mix well and fry for 2 minutes.
Cover and cook on low flame.
Separately boil 300 gm rice with a little water, when the rice a little tender, remove a little rice and spread on top of chicken mixture, then spread full tendered rice on top.
Now spread fried onion, a pinch yellow color dissolved in water and saffron on top.
Simmer for 10 – 12 minutes, dish it out and serve with Raita.

Chicken Drumsticks and Thighs

Ingredients:

Chicken drumsticks 4
Chicken thighs 4
For Marinade:
Soya sauce 3 tbsp
Ginger/garlic paste 1 tbsp
Black pepper 1 tsp
Lemon juice 4 - 6 tbsp ( I recommended 6 tbsp)
Paprika powder 1, 1/2 tsp
Salt 1 tsp
Chilli powder 1, 1/2 tsp
Jamaican style hot chilli sauce or any other chilli sauce 2 tsp
Tandoori spice 2 tsp
Yogurt 4 tbsp
Chicken powder or chicken coating powder 2 tbsp
Olive vinegar 1 tbsp or (buy a jar of olives soaked in vinegar and use the vinegar)
Oil 1 tbsp
Garlic 4 - 6 cloves
For Coasting:
Plain flour 1 cup
Baking powder 1 tsp
Salt 1/2 tsp
Egg 1
Chicken coating 3 to 4 tbsp
Paprika powder 1 tbsp

Cooking Directions:

To Prepare Chicken: First clean and wash the chicken.
pour about 3 cups water in a pan with garlic cloves, chicken and 1/2 tsp salt.
Cook for about 15 minutes. Once boiled drain the water out of the chicken and let it rest for a 5 to 10 minutes. Marinating The Chicken: Mix soya sauce, ginger/garlic paste, black pepper, lemon juice, paprika powder, 1 tsp salt, chilli powder, chilli sauce, tandoori spice, yogurt, olive vinegar and oil.
Now apply this mixture to chicken and let it marinate in it over night.
Frying The Chicken: Mix plain flour, baking powder, salt, paprika powder and chicken coating in a plate (flour coating).
Dip the chicken pieces in egg and then coat in flour coating.
Deep fry in hot oil over high flame for about 2 to 5 minute or until golden brown.
Strain out on absorbent paper and serve hot hot with dips and sauces.
